Here’s the good news: You don’t need fancy ingredients or hours in the kitchen to create meals your whole family will love. These recipes are kid-approved, budget-friendly, and designed to support your health in a way that aligns with your faith.


 

3 Quick and Nourishing Recipes


1. Turkey & Veggie Stuffed Sweet Potatoes

These stuffed sweet potatoes are packed with protein, vitamins, and flavor—perfect for a weeknight dinner!

• Ingredients:

4 medium sweet potatoes, 1 lb ground turkey, 1 cup diced zucchini, 1 cup diced bell peppers, garlic powder, smoked paprika, salt, and pepper.

• Instructions:

1. Bake sweet potatoes in the oven at 375°F for 45 minutes or microwave until soft.

2. Cook ground turkey in a skillet with diced zucchini, bell peppers, and seasonings.

3. Slice sweet potatoes open, top with the turkey mixture, and enjoy!


Turkey & Veggie Stuffed Sweet Potatoes

 

2. Veggie Fried Rice

This dish is a great way to use leftover rice while sneaking in extra veggies for the kids.

• Ingredients:

3 cups cooked brown rice, 1 cup frozen peas and carrots, 2 eggs, 2 tbsp soy sauce (or coconut aminos), 1 tbsp sesame oil, garlic powder.

• Instructions:

1. Scramble eggs in a skillet and set aside.

2. Sauté frozen peas and carrots in sesame oil. Add rice, soy sauce, and garlic powder, stirring well.

3. Mix in scrambled eggs, cook for 2-3 minutes, and serve warm.


Veggie Fried Rice

 

3. Simple Baked Drumsticks

Crispy, flavorful, and so easy to make, these drumsticks are a family favorite.

• Ingredients:

8 chicken drumsticks, olive oil, garlic powder, smoked paprika, oregano, salt, and pepper.

• Instructions:

1. Preheat oven to 400°F. Coat drumsticks with olive oil and spices.

2. Arrange on a baking sheet and bake for 35-40 minutes, flipping halfway through.

3. Serve with steamed veggies or roasted potatoes for a complete meal.
