🍠 Sweet Potato Nacho Boats


A healthier spin on nachos, swapping chips for roasted sweet potatoes. These are crispy, flavorful, and packed with nutrients, making them perfect for a fun family dinner!


Ingredients:

• 2 large sweet potatoes

• 1 lb ground turkey or beef

• 1 can black beans, drained

• 1 cup shredded cheese

• 1/2 cup diced tomatoes

• 1 avocado, sliced

• 1/2 cup Greek yogurt (as a sour cream swap)

• 1 tbsp taco seasoning


Directions:

1️⃣ Preheat oven to 400°F. Slice sweet potatoes lengthwise and bake for 25 minutes until tender.

2️⃣ In a skillet, cook ground turkey or beef with taco seasoning.

3️⃣ Top sweet potato halves with cooked meat, black beans, cheese, and tomatoes.

4️⃣ Bake for another 5 minutes, then add avocado and Greek yogurt before serving.

🍌 Peanut Butter Banana Oatmeal Pizza

• 1 1/2 cups rolled oats

• 1 ripe banana, mashed

• 1 tsp cinnamon

• 1 tbsp honey

• 1/2 cup Greek yogurt

• 2 tbsp peanut butter

• 1/2 cup sliced strawberries

• 1 tbsp chia seeds


Directions:

1️⃣ Preheat oven to 375°F. Mix mashed banana, oats, cinnamon, and honey to form a “crust.”

2️⃣ Flatten on a parchment-lined baking sheet and bake for 10-12 minutes.

3️⃣ Spread Greek yogurt and peanut butter over the baked crust.

4️⃣ Top with strawberries and chia seeds, slice like a pizza, and enjoy!

• 2 zucchinis, sliced into fry shapes

• 1/2 cup almond flour (or whole wheat flour)

• 1/2 tsp salt & pepper

• 1 egg, whisked


Protein Ranch Dip:

• 1/2 cup Greek yogurt

• 1 tbsp ranch seasoning

• 1 tsp lemon juice


Directions:

1️⃣ Preheat oven to 425°F. Slice zucchini into fries.

2️⃣ Dip each fry into whisked egg, then coat with a mixture of almond flour, Parmesan, garlic powder, salt, and pepper.

3️⃣ Arrange on a parchment-lined baking sheet and bake for 20 minutes, flipping halfway.

4️⃣ Mix Greek yogurt, ranch seasoning, and lemon juice for a high-protein dipping sauce. Serve and enjoy!
